Exclusive Chef

Chee Hwee Tong

Inspired by his grandmother’s cooking, Chee Hwee Tong, our consultant at Shang Shi restaurant, knew from a very young age that he wanted to become a chef. Looking back, he recalls the delicious meals she prepared “they are some of my earliest memories” and acknowledges that this childhood experience was the beginning of his culinary journey. Previously Executive Chef of the Hakkasan Group, and responsible for earning its first Michelin Star, he prides himself on finding modern ways to execute and present traditional dishes, whilst preserving their authenticity. A true pioneer of contemporary Chinese cuisine, it is wonderful to have this culinary impresario to oversee our exquisite Shang Shi restaurant.

Shang Shi’s stunning private dining room, with its beautiful 15th century hand painted ceiling, offers a memorable setting for private dinners for up to 8 guests. Enjoy bespoke menus and intimate tableside preparation of our most impressive dishes.
